
Jackfruit Tacos
A flavorful and easy-to-make taco recipe using slightly expired jackfruit to reduce food waste.
Ingredients
- 2 cups slightly expired jackfruit
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 8 small tortillas
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- Lime wedges for serving
Instructions
Heat olive oil in a pan over medium heat.
Add diced onion and minced garlic to the pan and sauté until golden brown.
Add the slightly expired jackfruit to the pan and cook for 5 minutes, breaking it up with a fork.
Add cumin, paprika, chili powder, salt, and pepper to the pan. Stir well to coat the jackfruit evenly with the spices.
Cook for an additional 5 minutes, allowing the flavors to meld together.
Warm the tortillas in a separate pan or in the oven.
Assemble the tacos by filling each tortilla with the jackfruit mixture.
Top with sliced avocado and chopped cilantro.
Serve with lime wedges for squeezing over the tacos.
