Ingredients
- 2 cups expired jackfruit, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1-inch ginger, grated
- 1 tomato, chopped
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 cup coconut milk
- 2 tablespoons vegetable oil
- Salt to taste
- Fresh cilantro, for garnish

Instructions

Heat vegetable oil in a large pan over medium heat.

Add the chopped onion and cook until translucent.

Add minced garlic and grated ginger. Sauté for another minute.

Add turmeric powder, cumin powder, coriander powder, and garam masala. Stir well to combine.
