Ingredients

  • 2 packets of expired instant ramen noodles
  • 1 tablespoon vegetable oil
  • 1 small onion, sliced
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Green onions, sliced (for garnish)

Instructions

Cook the expired instant ramen noodles according to package instructions. Drain and set aside.

Heat vegetable oil in a large skillet or wok over medium-high heat.

Add onion, bell pepper, carrot, and broccoli to the skillet. Stir-fry for about 5 minutes or until vegetables are tender-crisp.

Push the vegetables to one side of the skillet and add minced garlic to the empty space. Cook for about 30 seconds until fragrant.

Add cooked ramen noodles to the skillet and toss with the vegetables.

In a small bowl, whisk together soy sauce, sriracha sauce, sesame oil, salt, and pepper. Pour the sauce over the noodles and vegetables. Stir-fry for an additional 2-3 minutes.

Remove from heat and garnish with sliced green onions.
