Ingredients

  • 12 large mushrooms
  • 1 cup expired but safe hummus
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup bread crumbs
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper to taste

Instructions

1. Preheat the oven to 375°F (190°C).

2. Clean the mushrooms and remove the stems. Set the mushroom caps aside.

3. Finely chop the mushroom stems.

4. In a bowl, combine the chopped mushroom stems, expired but safe hummus, Parmesan cheese, bread crumbs, olive oil, parsley, salt, and pepper.

5. Stuff each mushroom cap with the hummus mixture, pressing it down gently.

6. Place the stuffed mushrooms on a baking sheet lined with parchment paper.

7. Bake for 15-20 minutes or until the mushrooms are tender and the filling is golden brown.
