  • 8 large mushrooms
  • 1 cup expired hummus
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup bread crumbs
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Remove the stems from the mushrooms and set aside.

In a bowl, combine the expired hummus, grated Parmesan cheese, bread crumbs, olive oil, dried oregano, salt, and pepper.

Fill each mushroom cap with the hummus mixture and place them on the prepared baking sheet.
