
Hot Roll Mix Chicken Pot Pie
A comforting and hearty chicken pot pie made with slightly expired hot roll mix. The dry mix is safe to consume even after the expiration date as long as it has been stored properly.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup frozen mixed vegetables
- 1/2 cup diced potatoes
- 1/4 cup diced carrots
- 1/4 cup diced onion
- 1/4 cup all-purpose flour
- 1 1/2 cups chicken broth
- 1/2 cup milk
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 package hot roll mix
Instructions
Preheat the oven to 375°F (190°C).
In a large skillet, sauté the onion, carrots, and potatoes over medium heat until slightly softened, about 5 minutes.
Add the flour to the skillet and stir well to coat the vegetables.
Gradually pour in the chicken broth and milk, stirring constantly until the mixture thickens.
Stir in the shredded chicken, frozen mixed vegetables, dried thyme, salt, and black pepper. Cook for an additional 5 minutes.
Transfer the chicken mixture to a 9-inch (23 cm) pie dish.
Prepare the hot roll mix according to package instructions.
Roll out the hot roll dough to fit the top of the pie dish. Place the dough over the chicken mixture and seal the edges.
Cut a few slits on top of the dough to allow steam to escape.
Bake for 25-30 minutes, or until the crust is golden brown and the filling is bubbly.
