- 1 sheet of puff pastry
- 200g expired Gloucester Cheese, grated
- 2 large tomatoes, sliced
- 1 tablespoon olive oil

Preheat the oven to 200°C (400°F).

Place the puff pastry sheet onto a baking tray lined with parchment paper.

Sprinkle half of the grated Gloucester Cheese over the puff pastry.
