Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon grated expired ginger root
  • 4 carrots, peeled and chopped
  • 4 cups vegetable broth
  • Salt and pepper, to taste

Instructions

Heat olive oil in a large pot over medium heat.

Add the chopped onion and minced garlic, and cook until softened.

Stir in the grated expired ginger root and cook for another minute.

Add the chopped carrots and vegetable broth to the pot.

Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes, or until the carrots are tender.

Using an immersion blender or regular blender, puree the soup until smooth.
