
Garlic and Lemon Shrimp Pasta
A zesty pasta dish utilizing expired but safe garlic paste, reducing food waste.
Ingredients
- 8 oz linguine or spaghetti
- 1 lb shrimp, peeled and deveined
- 2 tablespoons expired garlic paste (commercially packaged, unopened, within 180 days of expiration)
- 2 tablespoons olive oil
- 1/2 teaspoon red pepper flakes (optional)
- 1 lemon, zest and juice
- Salt and black pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
Cook the linguine or spaghetti according to the package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes per side until pink and cooked through.
Reduce the heat to medium-low and add the expired garlic paste, red pepper flakes (if using), lemon zest, and lemon juice to the skillet. Stir well to combine and cook for an additional 1-2 minutes to infuse the flavors.
Add the cooked pasta to the skillet and toss until well coated with the garlic and lemon sauce.
Season with salt and black pepper to taste. Sprinkle with chopped parsley before serving.
Serve hot as a delightful and tangy shrimp pasta dish.
