Ingredients

  • 1.5 lbs potatoes, washed and diced
  • 2 tablespoons olive oil
  • 2 tablespoons expired garlic paste (commercially packaged, unopened, within 180 days of expiration)
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

In a large bowl, combine the diced potatoes, olive oil, expired garlic paste, dried rosemary, dried thyme, salt, and black pepper. Toss well to coat the potatoes evenly.

Spread the potatoes in a single layer on the prepared baking sheet.

Roast in the preheated oven for about 30-35 minutes, or until the potatoes are golden and crispy, flipping them halfway through the cooking time for even browning.
