Ingredients

  • 1 lb expired frozen shrimp, thawed
  • 4 cups cooked rice, preferably day-old
  • 2 tbsp vegetable oil
  • 1 cup frozen mixed vegetables
  • 3 cloves garlic, minced
  • 2 eggs, beaten
  • 3 tbsp soy sauce
  • 1/2 tsp sesame oil
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions

In a large skillet or wok, heat the vegetable oil over medium-high heat.

Add the minced garlic and cook for 1 minute until fragrant.

Add the thawed shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque. Remove from the skillet and set aside.

Push the cooked shrimp to one side of the skillet and pour the beaten eggs onto the other side. Scramble the eggs until fully cooked.

Add the frozen mixed vegetables to the skillet and stir-fry for 2-3 minutes until heated through.

Add the cooked rice to the skillet and stir-fry for 5 minutes, breaking up any clumps.

Pour in the soy sauce and sesame oil. Stir well to coat the rice and vegetables.

Add the cooked shrimp back to the skillet and stir to combine.

Season with salt and pepper to taste. Stir well.

Remove from heat and garnish with chopped green onions.
