  • 4 frozen Shepherd's Pies
  • 4 large bell peppers
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onions
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

Preheat the oven to 375°F (190°C).

Cut off the tops of the bell peppers and remove the seeds and membranes.

Place the bell peppers in a baking dish and bake for 10 minutes to soften them slightly.

While the peppers are baking, heat olive oil in a skillet over medium heat.

Add the diced onions, carrots, celery, and minced garlic to the skillet. Sauté until the vegetables are tender.

Remove the skillet from heat and let the mixture cool slightly.

Take each frozen Shepherd's Pie and remove the crust, transferring the filling into a bowl.

Mix the sautéed vegetables with the Shepherd's Pie filling. Season with salt and pepper to taste.

Spoon the Shepherd's Pie mixture into the partially cooked bell peppers.

Top each stuffed pepper with shredded cheddar cheese.
