Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, thinly sliced
  • 2 bell peppers, thinly sliced
  • 2 cups broccoli florets
  • 1 cup snap peas
  • 1 cup expired frozen meatballs
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • Cooked rice, for serving

Instructions

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Add the onion, bell peppers, broccoli, and snap peas to the skillet. Stir-fry for 5-6 minutes, or until the vegetables are tender-crisp.

In a small bowl, whisk together the soy sauce, cornstarch, and water. Pour the sauce over the vegetables in the skillet.

Add the expired frozen meatballs to the skillet and stir-fry for an additional 3-4 minutes, or until the meatballs are heated through and the sauce has thickened.
