
Marinated Vegetable Skewers
A flavorful and colorful side dish that makes use of expired French Salad Dressing to reduce food waste.
Ingredients
- 1 zucchini, cut into thick slices
- 1 yellow squash, cut into thick slices
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1 cup button mushrooms
- 1/4 cup French Salad Dressing (expired, but safe to consume)
- Salt and pepper, to taste
Instructions
Preheat the grill to medium heat.
In a large bowl, combine the zucchini, yellow squash, red bell pepper, green bell pepper, red onion, and mushrooms.
Add the French Salad Dressing to the bowl and toss the vegetables until they are coated evenly.
Season the vegetables with salt and pepper according to your taste.
Thread the marinated vegetables onto skewers, alternating the different types of vegetables.
Grill the vegetable skewers for about 10-12 minutes, turning occasionally, until they are tender and slightly charred.
Remove the skewers from the grill and serve them hot as a side dish or with your favorite main course.
