- 2 pounds beef stew meat, cut into chunks
- 2 tablespoons olive oil
- 2 onions, chopped
- 4 carrots, peeled and sliced
- 3 cloves garlic, minced
- 2 cups Flanders Red Ale
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper to taste

In a large pot, heat the olive oil over medium-high heat.

Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.

Return the beef stew meat to the pot and add the Flanders Red Ale, beef broth, tomato paste, Worcestershire sauce, thyme, and bay leaves.
