Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup fresh spinach leaves
  • 1/4 cup expired feta cheese crumbles
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

Preheat the oven to 375°F (190°C).

Using a sharp knife, cut a pocket into the side of each chicken breast.

In a small bowl, mix together the spinach, feta cheese, olive oil, dried oregano, garlic powder, salt, and pepper.

Stuff each chicken breast with the spinach and feta mixture, pressing the edges to seal.

Season the outside of the chicken breasts with salt and pepper.

Heat a skillet over medium-high heat and sear the stuffed chicken breasts for 2-3 minutes on each side, until golden brown.
