Ingredients

  • 4 eggs, expired but still safe to consume
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/4 cup shredded mozzarella cheese (optional)

Instructions

In a bowl, whisk together the expired eggs, salt, and pepper.

Heat olive oil in a non-stick skillet over medium heat.

Add the diced bell peppers, onions, and tomatoes to the skillet and sauté until slightly softened.

Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are fully cooked and no longer runny.

If desired, sprinkle shredded mozzarella cheese on top and cover the skillet until the cheese melts.
