These fluffy eggnog pancakes are a great way to use up expired eggnog. The eggnog is thoroughly cooked during the pancake-making process. Please note that the eggnog used should be no more than 5 days past its expiration date.

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup expired eggnog
  • 1 egg
  • 2 tablespoons melted butter
  • 1/4 teaspoon vanilla extract
  • Butter or cooking oil for frying

Instructions

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate bowl, whisk together the expired eggnog, egg, melted butter, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are fine.

Heat a frying pan or griddle over medium heat and melt a small amount of butter or cooking oil.

Using a ladle or measuring cup, pour the pancake batter onto the pan, using about 1/4 cup for each pancake.

Cook until bubbles form on the surface of the pancake, then flip and cook the other side until golden brown.

Serve the eggnog pancakes warm with your favorite toppings.
