  • Vegetable Broth

Instructions

Heat olive oil in a large skillet over medium heat.

Add chopped onion and minced garlic, and sauté until translucent.

Add dry rice mix and cook for 2 minutes, stirring constantly.

Pour in vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.

Add mixed vegetables, salt, and pepper. Stir well, cover, and cook for an additional 10 minutes or until the vegetables are tender and the rice is cooked through.

Remove from heat and let it sit for 5 minutes. Fluff with a fork before serving.
