
Salted Fish Fried Rice
A delicious and safe-to-eat fried rice recipe that makes use of expired dried salted fish.
Ingredients
- 2 cups cooked rice
- 100g expired dried salted fish, soaked in water for 30 minutes and drained
- 2 eggs, beaten
- 1 small onion, diced
- 1 carrot, diced
- 1/2 cup peas
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 tablespoon soy sauce
- 1/2 teaspoon sesame oil
- Salt and pepper to taste
Instructions
Heat vegetable oil in a large pan or wok over medium heat.
Add the onion, carrot, peas, and garlic. Stir-fry for 2-3 minutes until the vegetables are slightly softened.
Push the vegetables to one side of the pan and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.
Add the drained salted fish to the pan and stir-fry for another 2 minutes.
Add the cooked rice to the pan and stir-fry everything together for 3-4 minutes until well combined.
Season with soy sauce, sesame oil, salt, and pepper. Stir well to distribute the flavors evenly.
Continue stir-frying for another 2 minutes to ensure the rice is heated through.
Remove from heat and serve hot.
