Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup cold brew coffee (slightly expired but safe)
- 1/2 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract

In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

In another bowl, whisk together the cold brew coffee, milk, egg, melted butter, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Heat a lightly greased griddle or non-stick skillet over medium heat.

Pour 1/4 cup of batter onto the griddle for each pancake.

Cook for 2-3 minutes, or until bubbles form on the surface of the pancake.

Flip the pancake and cook for an additional 1-2 minutes, or until golden brown.
