Ingredients

  • 4 large bell peppers
  • 2 cups expired chili con carne
  • 1 cup cooked rice
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

Preheat the oven to 375°F (190°C).

Cut off the tops of the bell peppers and remove the seeds and membranes.

In a bowl, combine the expired chili con carne, cooked rice, shredded mozzarella cheese, chopped green onions, chopped parsley, salt, and pepper.

Stuff each bell pepper with the chili con carne mixture.

Place the stuffed bell peppers in a baking dish and cover with foil.
