Ingredients

  • 2 chayotes, slightly expired
  • 1 cucumber
  • 1 red bell pepper
  • 1 small red onion
  • 1/4 cup fresh cilantro leaves
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

1. Peel the chayotes and cut them into thin slices.

2. Slice the cucumber, red bell pepper, and red onion into thin strips.

3. In a large bowl, combine the chayote slices, cucumber, red bell pepper, red onion, and cilantro leaves.
