
Chaga Mushroom Stir-Fry
A flavorful stir-fry dish made with slightly expired Chaga Mushroom, focusing on reducing food waste and ensuring food safety.
Ingredients
- 200g Chaga Mushroom, slightly expired
- 1 red bell pepper
- 1 yellow bell pepper
- 1 small onion
- 2 cloves of garlic
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 1/2 cup vegetable broth
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
Slice the Chaga Mushroom, bell peppers, and onion into thin strips.
Heat the vegetable oil in a large skillet over medium-high heat.
Add the Chaga Mushroom to the skillet and sauté for 3-4 minutes until slightly softened.
Add the bell peppers, onion, and garlic to the skillet and cook for another 3-4 minutes until vegetables are tender-crisp.
In a small bowl, whisk together soy sauce, sesame oil, cornstarch, and vegetable broth.
Pour the sauce over the vegetables in the skillet and stir well to coat.
Cook for an additional 2-3 minutes until the sauce thickens.
Season with salt and pepper to taste.
Serve hot over steamed rice or noodles.
