Ingredients

  • 1 cup expired canned almonds, finely chopped
  • 1 cup dates, pitted
  • 1/4 cup almond butter
  • 2 tablespoons honey
  • 1/4 cup shredded coconut

Instructions

In a food processor, combine the chopped almonds, dates, almond butter, and honey. Process until the mixture comes together and forms a sticky dough.

Roll the dough into small balls, about 1 inch in diameter.

Spread the shredded coconut on a plate. Roll each energy ball in the coconut until coated.

Place the energy balls in an airtight container and refrigerate for at least 1 hour before serving.
