
Almond Crusted Chicken
A delicious and easy recipe that uses canned almonds to create a crispy crust on tender chicken breasts.
Ingredients
- 4 chicken breasts
- 1 cup canned almonds, crushed
- 1/2 cup flour
- 2 eggs, beaten
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
Preheat the oven to 375°F (190°C).
Season the chicken breasts with salt and pepper.
Dredge each chicken breast in flour, shaking off any excess.
Dip the floured chicken breasts into the beaten eggs, allowing any excess to drip off.
Coat each chicken breast with the crushed canned almonds, pressing gently to adhere.
Heat olive oil in an oven-safe skillet over medium-high heat.
Add the almond crusted chicken breasts to the skillet and cook for 2-3 minutes on each side until golden brown.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Remove from the oven and let the chicken rest for a few minutes before serving.
