
Blue Cheese and Bacon Stuffed Chicken
Make use of expired blue cheese wedge to create a flavorful stuffing for chicken breasts.
Ingredients
- 2 boneless, skinless chicken breasts
- 1/4 cup crumbled blue cheese (expired but safe to consume)
- 2 slices bacon, cooked and crumbled
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
Preheat the oven to 400°F (200°C).
Using a sharp knife, create a pocket in each chicken breast by cutting a slit horizontally, being careful not to cut all the way through.
In a bowl, combine the crumbled blue cheese, crumbled bacon, salt, and black pepper.
Stuff each chicken breast with the blue cheese and bacon mixture, then secure with toothpicks if needed.
Heat olive oil in an oven-safe skillet over medium-high heat.
Sear the stuffed chicken breasts on each side for 2-3 minutes until golden brown.
Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through (internal temperature of 165°F/74°C).
Remove from the oven and let the chicken rest for a few minutes before serving.
Discard toothpicks before serving.
