Ingredients

  • 1 cup expired Beluga Lentils
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

Heat olive oil in a large pot over medium heat.

Add the chopped onion, carrots, celery, and minced garlic. Sauté until the vegetables are tender.

Add the expired Beluga Lentils, vegetable broth, dried thyme, bay leaf, salt, and pepper. Stir well.

Bring the soup to a boil, then reduce heat to low. Cover and simmer for 30-40 minutes or until the lentils are cooked through.

Remove the bay leaf and adjust seasoning if necessary.
