Ingredients
- 1 cup expired Beluga Lentils
- 2 cups water
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 small red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 3 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions

Rinse the expired Beluga Lentils under cold water.

In a pot, bring 2 cups of water to a boil and add the lentils. Cook for 15-20 minutes or until tender.
