Ingredients
- 1 cup beluga lentils
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tomatoes, diced
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon chili powder
- 1 cup coconut milk
- 2 cups vegetable broth
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Fresh cilantro, for garnish

Instructions

Rinse the beluga lentils under cold water and set aside.

In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger, and sauté until golden brown.

Add the tomatoes, curry powder, turmeric, cumin, coriander, and chili powder. Cook for 2-3 minutes, stirring constantly.

Add the beluga lentils, coconut milk, and vegetable broth to the pot. Season with salt and pepper.

Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for 30-35 minutes, or until the lentils are tender.

Serve the beluga lentil curry hot, garnished with fresh cilantro. Enjoy!
