- 4 strips expired bacon, chopped
- 1 bell pepper, thinly sliced
- 1 zucchini, thinly sliced
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 1/4 cup water
- Cooked rice, for serving

In a large skillet or wok, cook the chopped bacon over medium heat until crisp. Remove bacon from the skillet and set aside.

In the same skillet, add the bell pepper, zucchini, onion, and garlic. Stir-fry for 4-5 minutes or until vegetables are tender-crisp.

In a small bowl, whisk together soy sauce, sesame oil, cornstarch, and water. Pour the sauce mixture into the skillet with the vegetables.

Cook for an additional 2-3 minutes, stirring constantly, until the sauce thickens.

Add the cooked bacon back to the skillet and stir to combine.
