
Bacon and Vegetable Stir-Fry
A quick and easy stir-fry recipe that uses expired bacon, reducing food waste while ensuring food safety.

Ingredients
- 4 strips expired bacon, chopped
- 1 bell pepper, thinly sliced
- 1 zucchini, thinly sliced
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 1/4 cup water
- Cooked rice, for serving
Instructions
- In a large skillet or wok, cook the chopped bacon over medium heat until crisp. Remove bacon from the skillet and set aside.
- In the same skillet, add the bell pepper, zucchini, onion, and garlic. Stir-fry for 4-5 minutes or until vegetables are tender-crisp.
- In a small bowl, whisk together soy sauce, sesame oil, cornstarch, and water. Pour the sauce mixture into the skillet with the vegetables.
- Cook for an additional 2-3 minutes, stirring constantly, until the sauce thickens.
- Add the cooked bacon back to the skillet and stir to combine.
- Serve the stir-fry over cooked rice.
