Ingredients

  • 2 ripe avocados
  • 250g linguine pasta
  • 2 cloves of garlic
  • 1/4 cup fresh basil leaves
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish

Instructions

1. Cook the linguine pasta according to package instructions until al dente. Drain and set aside.

2. While the pasta is cooking, cut the avocados in half, remove the pits, and scoop out the flesh into a blender or food processor.

3. Add the garlic, basil leaves, lemon juice, olive oil, salt, and pepper to the blender. Blend until smooth and creamy.

4. In a large mixing bowl, combine the cooked pasta with the avocado sauce. Toss until the pasta is well coated.
