  • 6 large eggs
  • 1/2 cup expired Asiago cheese, grated
  • 1/2 cup spinach, chopped
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup onion, diced
  • 1 tablespoon olive oil

Instructions

Preheat the oven to 350°F (175°C).

In a mixing bowl, whisk the eggs until well beaten.

Add the expired Asiago cheese, spinach, cherry tomatoes, onion, salt, and pepper to the bowl. Mix well.
