
Asiago Cheese and Vegetable Quesadillas
These quesadillas are a delicious way to use up expired Asiago cheese and leftover veggies. Make sure the cheese is still safe to consume before using.
Ingredients
- 4 large flour tortillas
- 1 cup expired Asiago cheese, grated
- 1 cup mixed vegetables (e.g., bell peppers, zucchini, mushrooms), diced
- 1/4 cup red onion, thinly sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Salsa and sour cream for serving (optional)
Instructions
In a skillet, heat the olive oil over medium heat.
Add the mixed vegetables and red onion to the skillet. Season with salt and pepper. Cook until the vegetables are tender, about 5-7 minutes.
Remove the vegetables from the skillet and set aside.
Place one tortilla in the skillet over low heat.
Sprinkle half of the expired Asiago cheese evenly over the tortilla.
Spread half of the cooked vegetables on top of the cheese.
Top with another tortilla and press gently with a spatula.
Cook for 2-3 minutes on each side or until the tortilla is golden brown and the cheese is melted.
Remove from the skillet and repeat the process with the remaining ingredients to make another quesadilla.
Cut the quesadillas into wedges and serve with salsa and sour cream if desired.
Enjoy while warm!
