
Asiago Cheese and Spinach Stuffed Chicken Breast
Transform expired Asiago cheese into a flavorful stuffing for chicken breasts.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup expired Asiago cheese, grated
- 1 cup fresh spinach, chopped
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
Preheat your oven to 375°F (190°C).
Butterfly the chicken breasts by slicing horizontally through the middle, without cutting all the way through.
In a bowl, combine the expired Asiago cheese, chopped spinach, minced garlic, dried oregano, dried basil, salt, and black pepper.
Divide the cheese and spinach mixture evenly among the butterflied chicken breasts, spreading it out.
Fold each chicken breast in half to enclose the filling, and secure with toothpicks if needed.
Heat the olive oil in an oven-safe skillet over medium-high heat.
Sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown.
Transfer the skillet to the preheated oven and bake for 15-20 minutes until the chicken is cooked through and the cheese is melted.
Remove from the oven, discard the toothpicks if used, and let the chicken rest for a few minutes before serving.
