
Apple Oatmeal Pancakes

Ingredients
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup expired applesauce
- 1 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons vegetable oil or melted butter
Instructions
In a large bowl, whisk together the flour, oats, sugar, baking powder, baking soda, and salt.
In a separate bowl, mix together the expired applesauce, milk, egg, vanilla extract, and vegetable oil or melted butter.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter should be slightly lumpy.
Heat a non-stick skillet or griddle over medium heat. Lightly grease with oil or butter.
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
