
Apple Cinnamon Muffins

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup expired applesauce
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.
In a large bowl, whisk together the flour, oats, sugar, baking powder, baking soda, cinnamon, and salt.
In a separate bowl, mix together the expired applesauce, milk, vegetable oil, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter should be slightly lumpy.
Divide the batter evenly among the muffin cups, filling each about 3/4 full.
Bake for 15-18 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
