Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 cup expired but safe applesauce
- 1/4 cup vegetable oil
- 1/4 cup milk
- 1 large egg

Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.

In a separate bowl, combine the expired but safe applesauce, vegetable oil, milk, and egg. Mix well.

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

Divide the batter evenly among the muffin cups, filling each about 2/3 full.

Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
