Ingredients

  • 200g pasta
  • 1 can of anchovies (slightly expired)
  • 2 cloves of garlic
  • 1/4 cup olive oil
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon capers
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

Cook the pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the garlic and red pepper flakes, and cook until the garlic is fragrant.

Add the anchovies, breaking them up with a fork, and cook for 2-3 minutes until they start to dissolve.

Add the capers and lemon juice, and stir to combine.

Add the cooked pasta to the skillet and toss to coat the pasta in the sauce.

Season with salt and pepper to taste.

Serve the pasta hot, garnished with fresh parsley.
