Ingredients
- 2 cups vegetable juice
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste

Instructions

In a large pot, heat some oil over medium heat.

Add the chopped onion, sliced carrots, chopped celery, and minced garlic to the pot. Cook until the vegetables are tender.

Pour in the vegetable juice and add the bay leaf, dried thyme, and dried oregano. Season with salt and pepper to taste.

Bring the soup to a boil, then reduce the heat and let it simmer for about 30 minutes.

Remove the bay leaf before serving.
