Ingredients

  • 4 large potatoes, washed and thinly sliced
  • 1 onion, thinly sliced
  • 1 cup expired sour cream
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons melted butter
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

Preheat the oven to 375°F (190°C).

In a bowl, combine the expired sour cream, shredded cheddar cheese, grated Parmesan cheese, melted butter, salt, and pepper.

Grease a baking dish and layer half of the sliced potatoes and onions in the dish.

Spread half of the sour cream mixture over the potatoes and onions.

Repeat the layers with the remaining potatoes, onions, and sour cream mixture.

Cover the baking dish with aluminum foil and bake for 40 minutes.

Remove the foil and continue baking for an additional 15-20 minutes or until the potatoes are tender and the top is golden brown.
