Ingredients

Instructions

In a large pot, heat the olive oil over medium heat.

Add the onion, carrots, celery, and garlic. Sauté until the vegetables are tender.

Add the expired split peas, vegetable broth, bay leaf, dried thyme, salt, and pepper to the pot.

Bring the soup to a boil, then reduce the heat to low and cover the pot.

Simmer for about 1 hour or until the split peas are soft and cooked through.
