- 1 cup expired uncooked dried split peas
- 4 cups vegetable broth

- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 bay leaf

Instructions

In a large pot, heat the olive oil over medium heat.

Add the onion, carrots, celery, and garlic. Sauté until the vegetables are tender.

Add the expired split peas, vegetable broth, bay leaf, dried thyme, salt, and pepper to the pot.
