
Split Pea Salad
A refreshing salad that creatively uses expired split peas while ensuring food safety through proper cooking and storage.
Ingredients
- 1 cup expired uncooked dried split peas
- 3 cups water
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
Rinse the expired split peas under cold water.
In a medium saucepan, bring the water to a boil.
Add the split peas to the boiling water and cook for about 20-30 minutes or until tender.
Drain the cooked split peas and rinse them under cold water to cool them down.
In a large bowl, combine the cooked split peas, cucumber, red bell pepper, red onion, and parsley.
In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper to make the dressing.
Pour the dressing over the salad and toss to combine.
Refrigerate the salad for at least 1 hour before serving to allow the flavors to meld together.
Serve chilled and enjoy!
