
Split Pea Hummus
A creamy and flavorful hummus made with slightly expired uncooked dried split peas, ensuring food safety through proper cooking.
Ingredients
- 1 cup uncooked dried split peas, slightly past expiration
- 3 tablespoons tahini
- 2 cloves garlic
- 3 tablespoons lemon juice
- 1/4 cup olive oil
- 1/2 teaspoon cumin
- Salt to taste
- Water for boiling split peas
Instructions
1. Rinse the uncooked dried split peas under cold water.
2. In a large pot, bring water to a boil and add the split peas.
3. Boil the split peas for 15-20 minutes or until tender.
4. Drain the cooked split peas and let them cool.
5. In a food processor, combine the cooked split peas, tahini, garlic, lemon juice, olive oil, cumin, and salt.
6. Blend until smooth and creamy, adding water if needed to reach desired consistency.
7. Taste and adjust seasoning with salt and lemon juice if desired.
8. Transfer the split pea hummus to a serving bowl and garnish with a drizzle of olive oil and a sprinkle of cumin.
9. Serve with pita bread, crackers, or fresh vegetables.
