Ingredients

  • 1 cup sliced carrots
  • 1 cup sliced zucchini
  • 1 cup sliced bell peppers
  • 1 cup sliced eggplant
  • 2 tablespoons olive oil
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin

Instructions

Preheat the oven to 400°F (200°C).

In a large bowl, toss the sliced carrots, zucchini, bell peppers, and eggplant with olive oil, salt, and pepper.
