Sweet Potato Pancakes
A delicious way to use up expired sweet potato puree. These pancakes are safe to consume as long as the puree smells and tastes normal.
Ingredients
- 1 cup expired sweet potato puree
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/2 cup milk
- 1/4 cup melted butter
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 large egg
Instructions
In a large bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and ginger.
In a separate bowl, combine the sweet potato puree, milk, melted butter, maple syrup, vanilla extract, and egg.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it's okay if there are a few lumps.
Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.
Pour 1/4 cup of the batter onto the skillet for each pancake.
Cook until bubbles form on the surface, then flip and cook for an additional 1-2 minutes until golden brown.
Serve the pancakes warm with your favorite toppings.
Note: Make sure the sweet potato puree smells and tastes normal before using it.
