- 300g Stilton cheese
- 2 tablespoons butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped fresh chives for garnish

In a large pot, melt the butter over medium heat.

Add the chopped onion and minced garlic, and sauté until soft and translucent.

Crumble the Stilton cheese into the pot and stir until melted and well combined.

Pour in the vegetable broth and bring to a simmer. Let it cook for about 15 minutes.

Using an immersion blender or a regular blender, puree the soup until smooth.

Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.

Simmer for another 5 minutes to heat through.
