Ingredients

  • 6 eggs
  • 1 cup expired spinach, chopped
  • 1 cup mushrooms, sliced
  • 1/2 onion, diced
  • 1/4 cup milk
  • 1/4 cup grated Parmesan cheese

Instructions

Preheat the oven to 350°F (175°C).

In a large oven-safe skillet, heat olive oil over medium heat.

Add the diced onion and sliced mushrooms to the skillet and cook until softened.

In a bowl, whisk together the eggs, milk, grated Parmesan cheese, salt, and pepper.
