Ingredients

  • 8 wooden skewers, soaked in water for 30 minutes
  • 1/4 cup expired soy sauce (safe to consume)
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 package (14 oz) firm tofu, cubed
  • 1 red bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 zucchini, sliced into rounds
  • Salt and pepper to taste

Instructions

In a bowl, whisk together the expired soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger to make the marinade.

Place the cubed tofu in a shallow dish and pour half of the marinade over it. Gently toss to coat the tofu evenly. Let it marinate for at least 30 minutes.

Preheat the grill or grill pan over medium-high heat.

Thread the marinated tofu, bell pepper, red onion, and zucchini onto the soaked wooden skewers, alternating the ingredients.

Season the skewers with salt and pepper.

Grill the skewers for about 10 minutes, turning occasionally, until the tofu and vegetables are nicely charred and cooked through.

Brush the remaining marinade onto the skewers while grilling.

Serve the marinated tofu skewers as a delicious appetizer or over a bed of rice for a complete meal.
